To help make sure your beef is tender, it will age in our cooler for 10-14 days before processing.
Your take home yield will vary depending on the cuts you select and the quality of the beef, however on average you should be able to take the live weight and subtract 40% to get to the average hanging weight (the amount your bill will be based off of) and subtract 40% from the hanging weight to get an approximate take home weight.

Patties are 1/3 pound, and packaged in quantities of 4, 6, or 8.
